Dinner in a Pumpkin
1 med. round pumpkin
2 t. oil
1 lb. sausage
2 T. brown sugar
1 chopped onion
1 pound ground beef (friend uses all sausage)
2 T. soy sauce
14 oz. can mushroom (or 8 according to my friend who shared this recipe!)
1 can cream of chicken soup
1 c. cooked rice
Cut off top of pumpkin – save. Clean out pumpkin – remove seeds. Fry onions in oil until tender. Add meats and brown. Add brown sugar, soy sauce, mushrooms, and soup. Simmer 10 minutes. Add rice and generously season with salt and pepper. Rub inside of pumpkin with salt pepper. Fill pumpkin with meat and rice mixture. Replace top and place on baking sheet. Bake at 350°F for 2-3 hours. Be sure to include inside of pumpkin when serving.
Spicy (or not) Cheeseburger Soup
1½ c. water
2 c. cubed potatoes
2 carrots
½ t. salt
1 lb. hamburger
2½ c. milk
3 T. flour
8 oz. American cheese
½ t. red pepper (optional)
Combine the first three ingredients. Bring to a boil. Reduce heat. Cover and simmer until potatoes are tender. Stir in beef and 2 cups milk. Heat through. Combine flour and remaining milk until smooth. Gradually stir into soup. Bring to a boil. Cook and stir for 2 men. Or until thick and. Reduce heat, stir in cheese until melted.
Sweet Potato Casserole
From Favorite Recipes of the Sonifrank Family cookbook. This was my grandma’s recipe.
1½ c. white sugar
1 tsp. salt
2 T. flour
4 T. butter
3 eggs, slightly beaten
1 c. milk
1 c. crush pineapple
2 c. sweet potatoes, grated
Blend sugar, salt and flour. Cut in butter; add eggs, milk, pineapple and sweet potatoes and put in greased casserole dish. Bake uncovered in 350°F oven for 40 minutes or until set and brown.
Cranberry Sauce
1½ (12 oz.) bags cranberries
2 c. water
2 c. sugar
6 oz. or ¾ c. raspberry jello
4 c. applesauce
Cook cranberries in water until soft and sieve. Return to heat an add sugar and jello. Remove from heat and stir in apple sauce.
