Byler’s Deer Processing: A Family Tradition Serving the Valley

I recently had the chance to sit down with Hans Byler of Byler’s Custom Cutting and Deer Processing, and as I’ve come to learn, his operation isn’t just a butcher shop — it’s a family-centered business that has quietly become a cornerstone of the local hunting community.

Hans and his family have been serving the Valley since 2012, though his experience stretches back even further. Before settling here, Hans learned the trade in New York, working alongside his father-in-law in a butcher shop where he developed the skills and appreciation for careful meat processing. What started as a trade has clearly grown into a calling.

“We’ve always enjoyed working with meat and working with the community,” Hans shared. “Stocking people’s freezers and serving folks well is important to us.”

If you’ve hunted in this area over the years, chances are you’ve used Byler’s services or know someone who has. With the closing of some older operations and limited options nearby, hunters once had to drive as far as Bridgewater or beyond. Now, an efficient, trusted, and local solution exists right in our own backyard.

The growth of Hans’ business is a reflection of both demand and trust. Over the past several years, the number of deer processed has steadily climbed by roughly 100 per year. The past two seasons saw nearly 900 deer come through their doors, and this year he expects even more, especially since Virginia has extended rifle season from two weeks to seven.

Despite being surrounded by deer all season long, Hans himself doesn’t get out hunting often. Between long hours and the responsibility of running the shop, his focus stays on the business. However, what truly defines Byler’s operation is not just the volume — it’s the family involved in every step.

Hans and his wife are raising nine children, ranging in age from 9 to 22, and every one of them has a role in the business.

“It’s mainly a family business,” Hans told me. “We do have a few part-timers, but especially this time of year, it’s the family keeping things running.”

Watching this family work together is something special. When I stopped by, I witnessed the speed and precision of the process firsthand — a young Byler working through a deer with an ease that only comes from repetition and training.

Hunters bring in their field-dressed deer, which are then skinned, cooled, processed, and carefully prepared. Turnaround time is typically about a week, even during peak season. For those wanting more than basic cuts, Byler’s also offers a variety of smoked and specialty products: jalapeño and cheese bologna, sweet Lebanon bologna, snack sticks, jerky, and now even hot dogs.

“These are some of our most popular requests,” Hans explained. “If you’re hungry for something more than plain venison, we can make it happen.”

Like any job involving hundreds of animals each year, unusual sights do happen. One of Hans’ more memorable finds was a buck that came in with a bullet hole clean through its antler — intact and oddly impressive.

While the processing season demands long days — often starting at 6 a.m. and running well past evening — Hans accepts it with gratitude, knowing that the sacrifice allows for more relaxed time later in the year. Their newly expanded break area offers a glimpse into their values — a comfortable space for shared meals, rest, and time together even during the busiest days.

“We enjoy sitting down together in the evenings,” Hans said. “Even if it’s in the shop, it’s time with our family.”

And that, more than anything, is what stands out. In a world that often feels rushed and disconnected, Byler’s Deer Processing is a reminder of what family business truly looks like — dedication, skill, faith, hard work, and community all wrapped into one operation.

As a hunter myself, and as someone who deeply appreciates local businesses that serve with integrity, I’m thankful for what the Byler family provides to our region. They don’t just process deer — they preserve a tradition and serve the community with consistency and care.
