Crispy Smashed Brussels Sprouts

As shown in the picture, you can arrange these in four leaf clovers for St. Patrick’s Day, March 17, 2025.

4 c. Brussels sprouts (about 20 sprouts)

3 T. Primal Kitchen Avocado Oil

Salt and pepper to taste

Primal Kitchen Ranch Dip

Bring a pot of water fitted with a steaming basket to a boil. Meanwhile, wash the Brussels sprouts and remove stems and any wilted leaves. Steam the sprouts for about 5 to 10 minutes, or until they are fork-tender. While they are steaming, preheat the oven to 425°F. Once they’re soft, use the bottom of a clean cup or glass to smash each Brussels sprout into a disc about ¼-inch thick on a cutting board. Arrange the flattened sprouts on a baking sheet and drizzle with avocado oil. Season the sprouts with salt and pepper. Roast in the oven for about 15 minutes, or until crispy. Serve with Ranch Dip. Enjoy!

Strawberry Spinach Salad

¼ c. sliced almonds (store bought honey-roasted or candied from scratch*)

Dressing:

¼ c. olive oil

2 T. sugar

2 t. red wine vinegar

1 t. dried parsley

½ t. salt

¼ t. pepper

¼ t. red pepper sauce (e.g., Texas Pete)

*To candy almonds: in a medium saucepan or skillet, heat raw sliced almonds with 4 t. sugar, stirring constantly over medium-low heat. Remove from heat as soon as the sugar caramelizes to prevent scorching. Continue to stir to prevent clumping or scrape onto parchment paper to cool. 

Proportions: pound box of spinach with about a box and a half of strawberries and a little more than a 3.5 oz. bag of almonds in the produce department. Double the dressing for this amount. Enjoy!

Crockpot Butter Chicken

9 cloves garlic, minced

1 can evaporated milk

1 can tomato paste

2 T. flour

2 t. garam masala

½ t. cayenne or red pepper flakes

1 t. coriander

1 T. paprika

1 t. turmeric

1 t. cumin

1 ½ t. salt

½ t. pepper

2 lb. chicken, diced

Sauté garlic in a little olive oil. Add other sauce ingredients and cook for a short time. Mix with chicken in a slow cooker. Cook on low for 4-6 hours. Serve over rice or naan. 

Garam masala is an Indian cuisine spice mix usually including cardamom, cinnamon, cumin, cloves, bay leaves, star anise, and peppercorns.
