The Big Pancake is Going Nowhere

Jimmy Shiflet, the renowned owner of the beloved Southern Kitchen Restaurant, has recently purchased Town and Country Restaurant, signaling an exciting new chapter for the Broadway dining establishment. Shiflet’s vision for Town and Country aims to honor the restaurants legacy created by Rick the founder and current operator, while introducing a few fresh elements that promise to delight both longtime patrons and new visitors.

Continuing a Legacy

Shiflet is committed to preserving the essence of Town and Country. The restaurant will maintain its current hours and continue serving its popular breakfast and lunch menus. “The intent is to carry forward what Rick has already created. We’re going to keep what’s going, going,” Shiflet said, emphasizing his respect for the previous owner, Rick, and his successful approach the community loves.

Signature items, such as the famous big pancake, will remain unchanged. “The big pancake that Rick created, Town and Country created, is going to stay. It’s going to be around forever. We’re going to serve the same coffee, and other breakfast favorites” Shiflet assured.

Exciting Additions and Evening Service

While preserving the core offerings, Shiflet plans to introduce an evening dinner menu, offering another option in the local dining scene. “The goal is to open in the evening and offer a dinner menu for the Broadway community,” Shiflet explained. The new dinner service will feature hand-cut steaks, roast beef, and other hearty Southern dishes.

Breakfast lovers will be thrilled to hear that Town and Country will serve breakfast all day, following a model similar to Cracker Barrel and IHOP. “If you’re a second or third shifter, you can show up at 1 o’clock in the afternoon and have your breakfast,” Shiflet said.

A Blend of Styles and Flavors

While Town and Country will keep many of its beloved recipes, Shiflet intends to incorporate some Southern Kitchen influences. However, certain popular items, like Southern Kitchen’s fried chicken, will remain exclusive to their original location. “There will be certainly some Southern Kitchen influence, but the fried chicken’s not going to be here,” Shiflet noted.

Shiflet also plans to introduce new items such as smash burgers that will be nice and juicy. He aims to provide a nostalgic yet high-quality dining experience.

Staff and Decor

Jimmy has made it clear that the current staff at Town and Country are integral to the restaurant’s future. “I’ve spoken with lots of the staff… They know it’s me that’s buying, and I’m happy and glad to have them,” he said. Shiflet has no plans to make staff changes unless individuals choose to leave on their own.

In terms of decor, Shiflet envisions some updates to refresh the ambiance while maintaining the restaurant’s charm. “I think you could probably likely see some updates as far as decor and things like that,” he mentioned.

Community Engagement and Timeline

Shiflet values community input and is eager to listen to what locals want. “I want to hear what they tell me. What do they want? What are they interested in?” he said, demonstrating his commitment to serving the community’s needs.

The transition is expected to be smooth, with Shiflet aiming to begin operations by mid-June. Rick will continue to run the restaurant until then and has agreed to be a resource for Shiflet during the transition period. Shiflet emphasized the importance of this continuity, noting Rick’s dedication and hard work over the years.

A Bright Future

Shiflet’s acquisition of Town and Country Restaurant marks a new era for this beloved local eatery. By combining the best of what Town and Country has to offer with exciting new additions and a commitment to community engagement, Shiflet is poised to create a dining experience that honors the past while looking forward to the future.

The Broadway community eagerly anticipates the grand reopening and the many delightful meals to come. With Shiflet at the helm, Town and Country is set to become a cherished destination for both long-time fans and new diners alike.
