Cassindy Baker-Sours has a vision—and it’s finally taking shape. Nestled in a former home just off the main stretch, her soon-to-open coffee shop promises to offer much more than just a great cup of joe.
A longtime local with roots in real estate, Cassindy has spent the past two years dreaming, planning, and working through zoning and renovation challenges to bring her cozy café to life. What started as a simple idea— “a quiet place to study, sip coffee, and unwind”—has turned into a full-fledged neighborhood gathering spot in the making.
“I wanted a place where people could shut the door, get some work done, or just relax,” Cassindy said during our walk-through of the space. With a twinkle in her eye, she also gestured to a playful Plinko game set up for kids. “If they get 10,000 points, they win a free cup of coffee!”
Inside, the vibe is welcoming and homespun. A comfortable dining area, peaceful nook spaces, and a soon-to-be vibrant front porch create a setting that’s as charming as it is practical. While décor decisions still keep her up at night, Cassindy’s passion for every detail is clear. “This space has to feel like a place people want to come back to again and again.”
The coffee shop will offer a variety of drinks, including drip coffee, espresso-based drinks, iced coffee, and possibly cold brew in the future. Though Cassindy doesn’t drink coffee herself, she’s serious about quality and currently outfitting the shop with commercial equipment to ensure a great brew.
Her menu will also include baked goods Cassindy proudly says. Think banana bread, homemade danishes, and breakfast bagels with sausage and egg, just like her mom used to make. Grab-and-go options like mini charcuterie boxes— “adult Lunchables,” as she calls them—will be available for those looking for something quick and satisfying.
The shop will likely begin with summer hours from 8 a.m. to 1 p.m., focusing on the morning crowd—teachers, parents, and commuters alike. “Eventually I’d love to have evening hours, especially once it cools down,” she shared.
There’s even talk of adding a gazebo-style seating area outside and curbside pickup options in the future. While accessibility and parking requirements from the town have presented a few bumps in the road, Cassindy remains optimistic. “It might mean opening a little slow or temporarily closing for paving, but I think people will understand. I’ve come too far not to go for it.”
Cassindy opened in late July and has been greeted with enthusiasm by the community. Regardless, one thing is clear: this coffee shop will be a warm, thoughtful space built with intention and love.
“I just want it to be a place where people feel welcome,” she said. From the inviting porch flags to the aroma of fresh coffee and banana bread, that feeling is already well underway.
