Seasoned Burgers
1 lb. ground hamburger
Diced onion – desired amount
1 T. onion powder
1 T. ground fennel
2 t. Worcestershire sauce
1 t. Salt
I tried this combination for grilling and found it to be exceptionally good. I do not measure, so these are “guesstimates.” I err on heavy amounts but wrote this conservatively. I believe the fennel is the secret ingredient here. A tip for mixing meatloaf or raw ground meat such as this – turn two loaf bread bags inside out to use as gloves; invert to remove and discard. Packing an extra peanut butter lid works great to shape even, round burgers.
Potato Salad

5 lb. Yukon gold potatoes
2 c. mayonnaise
1 c. refrigerated dill pickle relish
2 T. yellow mustard
1 T. apple cider vinegar
1 T. celery seed
½ t. smoked paprika
1 T. dill
3 celery stalks, chopped
½ c. onion, chopped
Salt and pepper
Peel and dice potatoes and boil until fork tender, about 13 minutes. Strain immediately. It’s okay if they’re a bit soft/crumbly. In a bowl mix the mayonnaise, dill pickle relish, mustard, apple cider vinegar, celery seeds, paprika, dill, 1 teaspoon salt, and pepper to taste. Stir until smooth. Place the potatoes in a large bowl. Gently mix in the dressing until it coats the potatoes, then add in the celery and onions. Taste test for salt and pepper amounts. Cover and refrigerate for at least 4 hours.
Pineapple Orange Tapioca

½ c. tapioca
½ c. sugar
20 oz. can crushed pineapple
6 oz. can frozen orange juice concentrate
Mix sugar, tapioca, and juice drained from pineapple, plus enough water to make one quart liquid. Bring to a boil, stirring constantly. Remove from heat and add pineapple and frozen orange juice.
Strawberry Chocolate Pie

½ c. chocolate chips
1 T. butter
4 oz. cream cheese, softened
¼ c. sour cream
1 c. Cool Whip (or whipped cream)
3 T. vanilla
3-4 c. fresh strawberries
Strawberry glaze
1 baked pie shell
Cool Whip (or whipping cream)
Melt the butter and chocolate together. Brush onto pie shell quickly while warm. Beat the cream cheese well; add sour cream, Cool Whip, sugar and vanilla, beating well. Put on top of chocolate covered crust. Chill. Mix glaze with strawberries and put on top of cream cheese filling. Top with Cool Whip.
